These oatmeal biscuits are tender, chewy, and full of banana flavor! The recognizable cozy spices and plump blueberries make these even more irresistible. They'll keep for at least one week if kept in an airtight container in the refrigerator--if they last that long!
1 cup (100g) instant oats (fermented if needed and measured like that )
3/4 cup (90g) whole wheat or gluten-free* flour (quantified like that )
1 1/2 tsp baking powder
1/4 tsp salt
1/4 cup (63g) mashed banana
1 teaspoon vanilla extract
1/2 cup (120mL) pure maple syrup
1/4 cup (40g) raisins
In a medium bowlwhisk together the yogurt, milk, baking powder, cinnamon, and salt. In a separate bowl, whisk together the butter or coconut oil, mashed banana, and vanilla. Stir in the maple syrup. Add in the flour mixture, stirring just until incorporated. Allow the cookie dough rest for 10 minutes.
With a spoon and spatula, dip the cookie dough to 15 rounded scoops onto the prepared sheet, and apply to the desired depth and width using World's Easiest Three-Ingredient Vegan Cookie Recipes PETA a spatula. Bake at 325°F for about 10-12 minutes.
